The Vacherin Mont-d'Or AOP is the distinctive local soft cheese speciality from the Vaud town of Jura, with its dense forests and lush meadows. It has been lovingly produced by hand here for over 100 years. It is then matured in traditional affinage cellars to develop its delicate, mild flavour. The local firwood belt lends the cheese its typically exquisite trace of tannin. Vacherin Mont-d'Or AOP is a seasonal cheese, which delights cheese lovers from the end of September to April. Just like a fine wine, it only really reveals its mild flavour when it is brought to room temperature prior to eating. As such, it is best served with a spoon. This is the best way to fully enjoy its soft-melting properties and its velvety quality.
