Ingredients

  • 100 g of grated Emmentaler
  • 100 g of grated Gruyère
  • 50 g of grated Tilsiter
  • 50 g of grated Appenzeller
  • 50 g of chopped onion, blanched
  • ½ of a clove of garlic, finely chopped
  • 100 g of flour
  • 2 eggs
  • 150-200 mL of milk
  • salt
  • pepper
  • paprika
  • nutmeg
  • 400-500 g of dark bread, cut into 1 cm thick slices
  • cooking butter for frying

Preparation

  1. 1 Mix the cheese, onion, garlic and flour and make a hollow in the middle. Whisk the eggs and milk together and pour in. Stir until smooth and season.
  2. 2 Spread a 5 cm thick layer of the mixture on to the slices of bread.
  3. 3 Heat up the cooking butter. Lay the slices of bread into the pan with the cheese mixture side facing downwards and fry until golden brown. Keep warm.
