1 Scatter capers on the toast bread slices, lay on the slices of mozzarella and season with pepper. Make 4 sandwiches out of the 8 layered slices, pressing the halves firmly together.
2 Whisk the egg, milk, salt and pepper together. Dip the sandwiches firstly in the flour, then in the egg mixture.
3 Fry for 5 mins. in the cooking butter on a medium heat, turning over occasionally. Serve hot.
