400 g vegetables e.g. courgettes, peppers and leeks
2 tablespoons butter for frying
8 eggs
10 ml milk
Salt, pepper, nutmeg
Preparation
Cut the bacon or ham and potatoes into cubes. Chop the onion and garlic. Cut the vegetables into small pieces.
Fry the potatoes in 1 tablespoon butter in another frying pan. Add the onion, garlic and vegetables and fry for approximately 5 minutes. Mix in the meat. Season with a little salt.
Mix Appenzeller® CLASSIC, eggs, milk and seasoning together well and pour over the vegetables. Occasionally push backwards and forwards with a fish slice until the egg mixture is slightly flaky.
Fry the underside until golden yellow without stirring; the surface must remain moist. Serve immediately..
