1 kg of mainly waxy potatoes such as Sirtema, cooked in their jackets and allowed to cool.
3/4 a tsp of salt
pepper from a mill
2 tbs of cooking butter or cooking cream
125 g of spicy, sliced Tilsiter
75 g of grated Schabziger
2 tbs of finely chopped chives
chives for garnish

1 Grate the boiled potatoes with a rösti grater and season. Heat up the cooking butter in a non-stick pan and sauté the potatoes on a medium heat, occasionally turning them over.
2 Remove half of the potatoes from the pan. Shape the remainder into a flat cake. Lay the Tilsiter on top and sprinkle on the Schabziger and the chives. Spread the other half of the potatoes on top and press down, so as make a covered flat cake. Cover with a plate and fry until a golden brown crust forms. Turn over, using the plate, and fry the second side.
3 Serve the rösti immediately on the plate and garnish.
