Ingredients
Serves 6
Vinaigrette:
6 tbsp lemon juice
100 g extra native olive oil
2 tsp honey
Salt and pepper
Salad:
125 g Gruyère d'alpage AOP
1 melon
1 cucumber
1/2 red onion
1 bunch fresh lemon thyme
12 slices raw ham
Green garlic
Preparation
For the vinaigrette, mix lemon juice with olive oil, honey, salt and pepper and set aside. Cut melon into little balls, thinly slice cucumber and place in a large salad bowl. Add finely chopped onion, ham cut into bite-sized pieces, thyme and green garlic and mix together with vinaigrette. Before serving, cut and add cubes of Gruyère d’alpage AOP.
