Sbrinz AOP crackers with bacon, peaches and fresh fig sauce

Ingredients
Serves 4
12 round crackers or savoury biscuits
30 g Sbrinz AOP
12 bacon slices
2 small, firm peaches
2 ripe figs
Pepper
Preparation
Peel figs. Mix pulp into a creamy paste. Cut Sbrinz into shavings. Wash, halve and stone peaches. Cut into 12 slices.
Place crackers on a plate, sprinkle with Sbrinz shavings and top with peach slices. Add fig cream to peaches and sprinkle with freshly ground pepper.
Add a bacon strip to each cracker. Top with Sbrinz shavings and serve.
