Ingredients

makes approx. 20 pasties

dough:

  • 250 g of white flour
  • 1 tsp of salt
  • 100 g of butter, cut into pieces
  • 100 mL of water

filling:

  • 150 g of grated, spicy Tilsiter
  • 1 chopped and sautéed shallot
  • 1 crushed garlic clove
  • 50 g of blanched spinach, pressed and chopped
  • 1 egg
  • salt and pepper
  • egg yolk for brushing on

Preparation

dough:

  1. 1 For the dough: put the flour, salt and water into a bowl. Rub the mixture by hand into a crumbly consistency. Add the water and bond into a dough, using a wooden ladle. Do not knead. Wrap in transparent foil and put in the fridge.
  2. 2 Mix all the ingredients for the filling and season.
  3. 3 Roll out the dough into a thickness of 1-2 mm and cut out circles of 8-10 cm diameter. Lay a small amount of filling on each pastry circle and moisten the dough with a brush. Fold the pastry circles over and press down the edges with a fork. Brush with egg yolk.
  4. 4 Lay on the baking paper lining in a baking tin and bake for approx. 15 mins. until golden brown in the oven, preheated to 180°C.
