This cave-aged Emmentaler AOP is a cheese that meets the very highest standards and is considered a special treat for cheese connoisseurs. Selected wheels are stored and tended in one of the rock cellars on the Swiss Plateau. This cool, damp cellar with its special flora provides the ideal climatic conditions for a long maturation period. At 95% humidity and a constant temperature of 13°C, the cave-aged Emmentaler develops its full-bodied flavour and the distinctive, natural black rind.
