Vacherin Mont-d’Or AOP is the unique local soft cheese speciality from the Vaud Jura with its dense forests and lush meadows. For over 100 years it has been lovingly produced here by hand, before being matured in traditional affinage cellars to develop its delicate, mild flavour. It is then wrapped in a strap of local spruce bark to give it its typical exquisite hint of tannin. Vacherin Mont-d’Or AOP is a seasonal cheese that delights cheese lovers from the end of September to April. Like a fine wine, it only really unfolds its mild flavour when left at room temperature for a few hours prior to consumption. So it is best served with a spoon, to really bring out its melt-in-the-mouth, creamy quality. Gourmets enjoy Vacherin Mont-d’Or AOP as an excellent dessert cheese, or as a light supper with fine “Gschwellti” (boiled potatoes in their skins) or crispy bread.
